Later today I’ll be kicking off my multiplayer Minecraft project with many gaming buddies. If anyone is interested in learning more or participating, please drop me a line – and don’t feel bad if I did not discuss this with you so far. I wanted to build up nice and slowly, so the starting players are those friends with whom I’ve already had Minecraft conversations recently – but we’ll have plenty of room for more people!
If you don’t want to join us, but are interested in watching us flail around running from monsters while we argue about huge group projects – and who doesn’t like the sound of that! – we’ll be putting videos up on YouTube! Eventually!
And what would a weekly recap be without a new recipe to try? This week is one of my own creation. I present to you all: JoeShine’s Beany Quinoa Veggie ‘Stew’
One large onion (diced), two large cloves of garlic (diced), and a can of hominy in a large pan sauteed with plenty of olive oil and salt.
Once you’ve got a nice bit of color to the mixture, add ground ginger, dill, dried cilantro, one stock cube, and two tbsp balsamic vinegar. Add 2 1/2 cups of water, bring to a boil and then add one cup of quinoa. (From this point, we’re keeping track of minutes elapsed to time our other additions.)
At T+5 minutes, add a can of black beans, mashing up 1/4 of the can with a fork before adding. This will help thicken the whole mix.
At T+10, add one can of diced tomatoes, two diced zucchinis, 1/4 cup chopped kalamata olives.
At T+15, the quinoa should be close to done. Once it is nearly ready, fold in an entire bag of baby spinach – heat through.
We served with a little crumbled feta cheese.
Very tasty, lots of great textures, and looks amazing. Also pretty healthy – and easily vegan if you leave out the feta and use vegetable stock.
